Analog Kitchen Tools
There is something exciting about hand operated tools in the kitchen. I like using a mallet to crush nuts, or the sun to dry berries.A food processor can turn pecans into dust before you have a chance to stop it, while a mallet leaves texture behind: some pieces fine, some chunky, some still holding shape. In cooking, those small irregularities often matter. Knife, water, fire, hands, and time still do a lot of the best work.
